Ingredients
- 2 boneless, skinless thick chicken breasts
- 1 green pepper
- 1 medium tomato, halved and thinly sliced into half-moons
- 1 yellow bell pepper, thinly sliced
- 1 orange bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1/2 red onion, thinly sliced
- extra-virgin olive oil spray
- 1 tsp. Italian seasoning: basil and granulated garlic
- Kosher salt
- Freshly ground black pepper
- 1 cup shredded mozzarella
Procedure/Direction:
Preheat oven to 400°. Make slits in each chicken breast, being careful not to cut through completely, and stuff with vegetables.
Spray with olive oil cooking spray and season with Italian seasoning, salt, and pepper. Sprinkle with mozzarella.
Bake until chicken is cooked through and no longer pink inside, 45 minutes.
